Kale & Quinoa Salad
This one bowl salad is super simple to make from scratch and is a refreshing way to enjoy my favorite super foods, kale and quinoa!
- Juice of 1.5 lemons
- 1/4 TBSP Olive Oil
- 1 TBSP Maple Syrup
- Salt & Pepper to taste
- 2 Bunches Kale, de-stemed and cut into bite sizes
- 2 C Cooked Quinoa (I pre-make an entire pot without seasoning and keep in fridge for use during the weeks meals)
- 1 Large Red Bell Pepper, diced
- 1 Large Avocado, diced
- 1/2 C each, Golden Raisins & Almond Slices
Whisk together first 4 ingredients in large bowl.
Add Kale, raisins and red peppers and crunch into dressing.
add remaining salad ingredients.
I like to sprinkle the quinoa on top along with a small amount of feta or part cheese.
Add grilled chicken if desired.
