Zuppa Toscano *Gluten & Dairy Free

Seriously, if you have ever enjoyed a bowl of this at the Olive Garden then you know why I decided to make my own at home and to make it healthier is a bonus!

This is a healthier version on an Olive Garden favorite loved by so many! Try this version in your Instant or Ninja Foodi and it will be ready in less than 15 minutes! Typically it has loads of pork fat and heavy cream. My version uses ground turkey, no bacon and no dairy at all!

My trick is to use ground turkey and season it in a way to mimic Italian pork sausage.

Step 1.
Using the sear/saute function on the Instant Pot or in my case the Ninja Foodi cook the onions and garlic until cooked but not browned.

Step 2 . Add in ground meat or meat substitute of choice, I used ground turkey.

Step 3. Add ground fennel & sage to the pot and stir.

Step 4. Add Soy amino (or gluten free soy sauce or tamari sauce)

Step 5. Add coconut milk (or heavy whipping cream if not dairy free). Add Potato, kale and chicken or vegetable stock to the pot.

Step 6. Place pressure lid on and set on Hi for 10 minutes.

Step 7. Remove steam from pot, open carefully as it will be hot and ENJOY!!

Ingredients

  • 16 oz ground turkey
  • 1-2 TBSP olive oil
  • 12 large onion (diced)
  • 2-3 cloves garlic (minced)
  • 28 oz low-sodium chicken broth
  • 1/4 C Soy Amino
  • 3 cups water
  • 5 medium russet potatoes (thinly sliced)
  • 1 tsp crushed red pepper flakes (optional)
  • Salt and pepper (optional)
  • 2 TBSP fennel seeds (crushed)
  • 1 TBSP ground sage
  • 4 cups chopped kale
  • 1 can coconut cream (thicker version)
