Protein Bite Par-Tay!

This year I decided to invite health conscience friends over to make & take some of my favorite treats. Not only do they taste like guilty pleasure but they are loaded with healthy protein and nutrients that are great for keeping those sugar cravings under control.

This time of the year the average person can gain 5-8 lbs!! That’s crazy, right? On top of this, most will get sick with virus or bacterial infections. Making sure we stay well nourished I crucial to overall health and prevention.

I decided on 4 of my favorite flavors…



Ingredients
1/2 c vanilla life shake
1/2 c dried cranberries
1 c oats
1/2 tsp cinnamon 
1/3 c honey
1 c peanut butter
Hemp seeds (optional)
White chocolate chips, melted
Directions
Combine all the ingredients except for the white chocolate chips. Roll into balls, then dip half of the ball into the melted white chocolate or drizzle over top and place on wax paper lined plate. I ended up drizzling mine with white chocolate. Chill in fridge and enjoy!
Ingredients
1/4 cup Vanilla Life Protein
1 cup pitted dates, soaked in hot water, if needed to soften
1 cup cashews
1 cup unsweetened shredded coconut (divided in half)
1/4 cup chia seeds
Zest of 1 lemon
Juice of 1 lemon
Directions
Add dates to food processor and process until broken up into pea-sized bits. If your dates are not sticky, be sure to soak them in hot water for 15 minutes to soften and then drain.
Add cashews, 1/2 cup of coconut, Vanilla Life Energizing Shake, and chia seeds and process until well combined.
Add lemon zest, juice, and sea salt and process for 1 more minute until dough comes together into a large ball (add a tablespoon or two of warm water if needed).
Roll into 18 balls and then roll balls in remaining 1/2 cup coconut.
Place in freezer for 15 minutes. Store in fridge for up to 1 month.
Ingredients
3/4 cup Vanilla Life Shake Protein
3/4 cup Old Fashioned Oats
1/3 cup unsweetened coconut flakes
1/3 cup mini chocolate chips
1/3 cup local honey
3/4 cup peanut butter
Directions
Combine and scoop into balls using a cookie scooper or ball in hands. Chill before serving.


Ingredients
1/2 cup smooth natural almond butter
1/4 cup + 1 tbsp. liquid sweetener* (see Notes)
2 scoops Vanilla Plant based Protein
2 tbsp. dairy-free mini chocolate chips
1 bar of dairy-free peppermint dark chocolate
1 candy cane, crushed 
Directions
First off, mix almond butter, sweetener, life shake until smooth. Add in the mini dark chocolate chips and mix again, until well incorporated. Using a teaspoon, scoop out the “dough” and roll into bite-sized balls. Put onto plate, and repeat. Place plate into freezer.
In the meantime melt the peppermint dark chocolate bar in the microwave until completely melted, 30 seconds at a time and stirring in between. Take protein bites out of freezer, and drop in a few bites at a time, making sure to coat it completely with chocolate (I did this with a spoon). Spoon the chocolate-covered protein bite and put it on a plate covered with parchment paper. Sprinkle protein bites with crushed candy cane pieces a few at a time s the dark chocolate coating hardens quickly. Repeat process until all protein bites are on plate.  Return to the freezer until chocolate has set. Enjoy!
